Turkey Enchilada Casserole

For those of y’all who prefer a leaner dish, try substituting chicken and beef with turkey meat. I made this turkey enchilada casserole for my family to enjoy while I was away this weekend. You can’t even tell that it’s turkey meat and it tastes just as delicious. Guys, don’t freak out, this is not a chick dish because of the lean meat…I also added bacon. All clear.

Key Lime Bundt Cake

For Mother’s Day, I made a Key lime bundt cake instead of a pie. I did some digging and found a great Paula Deen (surprise, surprise) recipe. The cake tastes more like a pound cake and the lime glaze leaves a fresh and zesty finish. I had to bake this at high altitude so keep this in mind when you make this. For those of y’all who live on a mountain (like me), bake at 350˚F for 1 hour and 20-30 minutes and for those of y’all at sea level, bake at 325˚F for 1 hour and 20 minutes. You may need to bake it a little longer until a toothpick comes out of the cake clean. Paula makes a three-layer cake but I went with the bundt shape instead.

Chicken Apple Sausage and Broccoli Pasta

Sprouts has some of the best selection of sausages I’ve ever seen. My go-to choice is usually a chicken sausage filled with blue cheese. This week when I went in to purchase my normal order, the guy behind the counter threw in a chicken apple sausage. I kept telling him that it wasn’t necessary and that I just wanted my normal order, but he absolutely insisted that I have one on him. He told me that it would become my second favorite and  how could I resist anyone giving me free food? I decided to experiment with my giveaway and cooked up a chicken apple sausage and broccoli pasta dish. This is not only a super easy recipe to make but it’s also very delicious. You can use any type of pasta or sausage but the subtle apple flavor of the chicken apple sausage makes a huge flavor difference. I’ll be seeing the guy at Sprouts soon :)
