I have always wanted to make biscuits from scratch so I made them this weekend. I used my new food processor again and I am proud to say that I still have all 10 fingers. Lesson learned. When I decided to make the biscuits from scratch, I figured the only person I’d go to for a recipe would obviously be Paula Deen. Buttermilk biscuits and Paula Deen kinda go hand in hand.
These biscuits are incredibly amazing. I wish I had tripled the batch because they went way, way too quickly in my house. I made them before church on Sunday and kept thinking throughout the sermon about how I couldn’t wait to get home and dig into another biscuit. Yes, they were that good (You can call me a heathen, but only this once). I don’t think I’ll ever buy the store bought thaw-and-pop-em-in-the-oven-doughboy biscuits again. Seriously, it is SO worth it. I am talking up these biscuits for a reason. They are mind blowing. End of discussion.
I made my first big kitchen investment this weekend and bought a new toy It’s a 6-quart Staub Dutch oven. And it is b-e-a-utiful. I have been looking at Staubs for a while and have been trying to find reasons that justify me buying one right now. The only good and sensible reason I could come up with was that I could make killer meals in it. Seemed good enough to me. As soon as I got home I needed to make something STAT so I made beef stew.
I am addicted to the show Duck Dynasty. I look forward to it every Wednesday night (season 3 starts February 27!). I even got one (or two) of Si’s tea cups at Bass Pro Shop last weekend. Feel free to judge me, or don’t (I’m not a yuppie girl). Anyways, this is a really great recipe and makes a super tasty appetizer. I made these bacon jalapeño duck wraps for the Super Bowl last weekend and they were a huge hit.
This recipe is pretty popular to make when you have duck breasts. I had about 8 duck breasts (I actually shot one of the four ducks ) and used all of the duck to make this appetizer. I wanted to make these appetizers bite-size so I cubed the duck meat instead of wrapping the whole duck breast in bacon. I figured all the folks at the Super Bowl would enjoy bite-size appetizers better. Duck meat is pretty gamey and wrapping it in bacon really takes away the gaminess. I don’t think I can put it better than Willie Robertson… “Simply the best way for my taste buds to eat a duck”. Everyone has their own way of making duck wraps but I combined the recipe from the Delta Waterfowl website and the Duck Commander cookbook. *Note: This recipe takes roughly 2 days to make because you have to soak the duck breast in salt water and marinade the day before grilling*
